TOMATO BRUSCHETTA

Step 2 In a medium bowl, toss the tomatoes with olive oil, salt, pepper, and hand-torn basil. Let it sit for 10 minutes to develop flavors.

Step 3 Toast the bread slices on a grill or in the oven until golden brown. Lightly rub the garlic cloves over the surface of the warm bread.

Step 4 Spoon the tomato mixture generously onto the bread slices and serve immediately.

Serve these on a wooden platter while the bread is still warm and crunchy. If you have leftover tomato topping, store it in the fridge for up to 24 hours, but always toast the bread fresh.
