Boil the hibiscus flowers in the 3 cups of water for 10 minutes.
Strain the liquid and add the sugar while it’s still hot. Mix well.
In another bowl, hydrate the unflavored gelatin with the cold water for 5 minutes.
Add the hydrated gelatin to the hot hibiscus tea and mix until completely dissolved.
Pour the mixture into molds or containers.
Refrigerate for at least 3 to 4 hours until set.
