Preparation:
Preheat the oven to 180°C. Grease or line a 22-24 cm round cake tin with baking paper.
Beat the eggs with the sugar until light and fluffy.
Add the milk and melted butter and mix well.
In a separate bowl, mix the flour, rolled oats, baking powder, cinnamon, vanilla sugar and salt.
Gently fold the dry ingredients into the batter.
Add the diced apple and mix briefly.
Pour the batter into the cake tin and smooth the top.
Optionally sprinkle with sugar, cinnamon and a little rolled oats.
Bake the cake for 35-40 minutes until golden brown and cooked through. Check with a toothpick.
Let the cake cool slightly before slicing.
Tips:
Replace half of the apples with pears for a milder flavor.
Serve the cake warm with vanilla sauce or a scoop of ice cream.
Use coarse oatmeal for extra bite.
